It also provides freeze-thaw stability and shows remarkable suspension characteristics. Used in food preparations as a thickener, stabilizer, emulsifier, suspending agent, prevention of ice crystals in ice cream, and provides a fat-like feel to low or non-fat dairy products. It is also used in place of gluten free flour as a baking aid in gluten free foods. Used in cosmetic and pharmaceutical applications such as tooth pastes, lotions, shampoos and tablet formulations. Cosmetic manufacturers add small amounts of Xanthan Gum to cream-based products to keep the individual ingredients from separating.
