It also provides freeze-thaw stability and shows remarkable suspension characteristics. Used in food preparations as a thickener, stabilizer, emulsifier, suspending agent, prevention of ice crystals in ice cream, and provides a fat-like feel to low or non-fat dairy products. It is also used in place of gluten free flour as a baking aid in gluten free foods. Used in cosmetic and pharmaceutical applications such as tooth pastes, lotions, shampoos and tablet formulations.
